This looks great! The treatment of the small tomatoes (seeding, flattening) is genius. Recently, I've been persuaded to use mayonnaise instead of butter for a crisper grilled crust--not a lot, but a consistent film.

That is my husband’s trick too--the mayo adds a bit of tanginess (and is a lot easier to spread). 😊

The sandwich sounds great, if maybe too cheesy for me. Though I remember you and I eating grilled cheese sandwiches in New Jersey diners and loving them--those were the days! My favorite winter comfort food is soup. I could probably eat it for lunch and dinner all winter and be happy. With homemade bread, of course, and cheese or hard-boiled eggs on the side. Woman cannot live by soup alone.
